2、0℃,豆粕底物濃度40g/L的條件下,酶解3h得到的產(chǎn)物ACE抑制活性最高,為64.21%,對應(yīng)水解度14.86%;進一步對ACE抑制肽進行高效液相色譜(HPLC)以及超高壓液相色譜/四極桿-飛行時間串聯(lián)質(zhì)譜聯(lián)用儀(LC-MS)的分析結(jié)果顯示:活性物質(zhì)的主要組分為三肽化合物,分子量為359,分子式為C15H30N6O4,由異亮氨酸、精氨酸和丙氨酸構(gòu)成;其HPLC檢測條件為色譜柱:Zorbax300SB-C18,5μm,4.6×150mm;檢測波長:228nm,流動相:50%甲醇-超純水,各含0.1%三氟乙酸;流速:0.7mL/min;柱溫:26℃;進樣量:10μL。關(guān)鍵詞:豆粕;堿性蛋白酶;
