1、中國農(nóng)業(yè)科學(xué):200235(2):192-197ScientiaAgriculturaSinica蕓薹屬蔬菜中硫代葡萄糖苷鑒定與含量分析112何洪巨,陳杭,W.H.Schnitzler(12國家蔬菜工程技術(shù)研究中心,北京100089;德國慕尼黑工業(yè)大學(xué)蔬菜學(xué)院85350)摘要:對蕓薹屬中白菜類、芥菜類和甘藍(lán)類蔬菜的硫代葡萄糖苷(簡稱硫苷)組成與含量進(jìn)行了評價。結(jié)果表明,散葉甘藍(lán)硫苷總含量最高,其次是包包青菜、包心芥菜、芥藍(lán),小白菜的含量最低。不同的品種硫苷的類型和含量不同。白菜類中,小白菜主要的硫苷為32丁烯基和12甲氧基23
2、2吲哚基甲基硫苷,菜心中為32丁烯基和22羥基232丁烯基硫苷,薹菜中為12甲氧基232吲哚基甲基和42戊烯基硫苷。在芥菜類中,發(fā)現(xiàn)了兩種不同硫苷類型,烯丙基硫苷是包包青菜、包心芥菜主要的硫苷,約占總含量的90%;而在小葉芥中32丁烯基為主要的硫苷,約占總含量的70%。甘藍(lán)類中羽衣甘藍(lán)主要含有32吲哚基甲基硫苷和32甲基硫氧丙基硫苷。42甲基硫氧丁基硫苷的含量以芥藍(lán)中最高,此外,32丁烯基硫苷的含量也比較高。在散葉甘藍(lán)中,22羥基232丁烯基硫苷是主要的組成,約占總含量的43%,烯丙基硫苷和32吲哚甲基硫苷占總含量的20%左右
