1、蜂蜜噴霧干燥加工工藝的研究摘要蜂蜜是一種保健型的食品,可直接食用,也可作為添加劑用于食品加工當中,深受人們的喜愛。但是目前市場上的蜂蜜,多以液態(tài)蜂蜜為主,使用、運輸、儲存等都存在不便之處。本文探討了如何采用噴霧干燥法將液態(tài)蜂蜜加工成固體蜂蜜,對工業(yè)化生產(chǎn)蜂蜜粉提供一定的試驗依據(jù)與技術(shù)支持。本文研究了蜂蜜噴霧干燥加工工藝中以下幾個關(guān)鍵問題;助干劑的選擇,噴霧干燥工藝參數(shù)的優(yōu)化,各配料對蜂蜜粉品質(zhì)的影響以及蜂蜜粉吸濕性問題等。試驗結(jié)果表明:主助干劑選擇普通低DE值的麥芽糊精、蜂蜜與主助干劑比例選擇1:1、入料濃度25%、入料流量20mUmin、入料溫度70
2、℃、進風溫度210℃、霧化器轉(zhuǎn)速21000r/rain時,蜂蜜粉得率較高,含水率符合要求;以蠟質(zhì)玉米淀粉為原料自制的低DE值麥芽糊精可提高蜂蜜粉的可溶性物質(zhì);噴霧干燥前的混合料液當中添加50.O%的蜂蜜,35.O%的自制麥芽糊精,4.5%6,環(huán)狀糊精、3.5%大豆分離蛋白、3.O%可溶性玉米淀粉、4.0%卵磷脂,可以提高蜂蜜粉營養(yǎng)、感官品質(zhì);研究了蜂蜜粉的吸濕特性,得出蜂蜜粉產(chǎn)品在不同相對濕度條件下的吸濕特性曲線,選取了較為常用的三種材料,對產(chǎn)品的儲藏期作了預(yù)測,為產(chǎn)品的包裝設(shè)計提供了參考。關(guān)鍵詞:蜂蜜粉噴霧干燥配料低DE值麥芽糊精吸濕性AStudyo
