2、皮的薄壁組織和內(nèi)果皮含大量淀粉粒,中果皮的厚角組織及外果皮無淀粉。果實(shí)成熟變紅后,淀粉粒消失,果皮積累兩種脂滴,外果皮積累質(zhì)體脂滴,中果皮及內(nèi)果皮積累質(zhì)體脂滴和胞質(zhì)脂滴;胞質(zhì)脂滴橢球形,存在于細(xì)胞質(zhì)中,沿質(zhì)膜內(nèi)表面排列,質(zhì)體脂滴球形和棒狀,存在于有色體中;外果皮中質(zhì)體脂滴以球形為主,中果皮和內(nèi)果皮中質(zhì)體脂滴以棒狀為主;胞質(zhì)脂滴和質(zhì)體脂滴都與四氧化鋨反應(yīng),顯示脂肪酸鏈含有雙鍵。歸納起來,果實(shí)成熟前,果皮中的貯藏物質(zhì)是淀粉粒,淀粉積累有組織特異性,只在中果皮的薄壁組織和內(nèi)果皮中積累;果實(shí)成熟變紅后,貯藏物質(zhì)轉(zhuǎn)化成胞質(zhì)脂滴和質(zhì)體脂滴,質(zhì)體脂滴存在于所有
