2、8.61%,均含有8種人體必需氨基酸,必需氨基酸分別占總氨基酸質(zhì)量的34.34%和34.15%,必需氨基酸與非必需氨基酸的比值分別為0.6164和0.6l12,依據(jù)FAO/WHO推薦模式計(jì)算獲得的必需氨基酸指數(shù)(EAAI)分別為97.53和84.19。黃色蛹和黑色蛹鮮質(zhì)量中的粗脂肪質(zhì)量分?jǐn)?shù)分別為5.34%和5.91%,且不飽和脂肪酸所占比率均較高,分別為總脂肪的80.72%和80.16%,但必需脂肪酸質(zhì)量分?jǐn)?shù)有差異,黃色蛹為53.03%,黑色蛹為49.61%。此外,2種顏色柞蠶蛹均含有Mg、Fe、Zn、K、Ca、Cu、Mn等多種礦物質(zhì)元素,均未檢出Pb、Hg、As等重金屬元
