2、8．61％，均含有8種人體必需氨基酸，必需氨基酸分別占總氨基酸質(zhì)量的34．34％和34．15％，必需氨基酸與非必需氨基酸的比值分別為0．6164和0．6l12，依據(jù)FAO／WHO推薦模式計(jì)算獲得的必需氨基酸指數(shù)(EAAI)分別為97．53和84．19。黃色蛹和黑色蛹鮮質(zhì)量中的粗脂肪質(zhì)量分?jǐn)?shù)分別為5．34％和5．91％，且不飽和脂肪酸所占比率均較高，分別為總脂肪的80．72％和80．16％，但必需脂肪酸質(zhì)量分?jǐn)?shù)有差異，黃色蛹為53．03％，黑色蛹為49．61％。此外，2種顏色柞蠶蛹均含有Mg、Fe、Zn、K、Ca、Cu、Mn等多種礦物質(zhì)元素，均未檢出Pb、Hg、As等重金屬元
