1、※包裝貯運食品科學(xué)2013,VoL34,No.20323含氦(He)氣調(diào)包裝對冷卻豬肉保鮮效果的影響陳常秀(臨沂大學(xué)生命科學(xué)學(xué)院,山東臨沂276005)摘要:為研究含氦(He)氣調(diào)包裝對冷卻豬肉保鮮效果的影響,探索其延長冷卻豬肉保鮮期的方法,將100g左右的冷卻豬肉150塊隨機分成5組,每組30塊。I組不采用任何處理方法,將II、III、Ⅳ和V組分別用N、He.N、He.CO,和N,.CO,混合氣體(所有混合氣體中各組分比例均為1:1,V/進行氣調(diào)包裝,各處理組均放在O~C冰箱中貯存,測定0、5、12、19d和26d肉樣的微生物指標(biāo)、理化指標(biāo)和感官指標(biāo)(I組只測定貯藏0、
2、5、12d的肉樣指標(biāo))。結(jié)果表明:1)4種氣調(diào)包裝均具有抑菌效果,混合氣體含有CO:的Ⅳ、V組抑菌效果更好,其中,用He代替N:的Ⅳ組抑菌效果最佳;2)4種氣調(diào)包裝和He混合氣體均沒有對豬NpH值造成很大影響;3)貯藏12d的II組和III組、貯藏19d的V組以及貯藏26d的Ⅳ組豬肉TVB。N值、腐胺和尸胺含量、感官得分與貯藏5d的I組差異不顯著(尸>0.05),4種氣調(diào)包裝$1He混合氣體均對豬肉肉色起到了一定的保護作用。II(N:)~llII(He—N:)組豬肉貨架期延長了1周,V(N:一CO:)組延長了2周,IV(He—CO)組延長了3N。在氣調(diào)包裝中使用He.CO
