1、僳鮮ScienceandTe&nologrofFoodIndustry低溫液體速凍對軟殼三疣梭子蟹凍藏期問肌肉生化特性的影響黃剛，婁永江，王春琳(寧波大學(xué)海洋學(xué)院，浙江寧波315211)摘要：為明確低溫液體速凍對軟殼三疣梭子蟹的保鮮效果，通過對持水力、pH、TBA值、肌動球蛋白鹽溶性、Ca“一ATPase活性、巰基含量等理化指標(biāo)的測定，研究了軟殼三疣梭子蟹經(jīng)一25、一35和一50℃液體速凍處理后在一20~C凍藏過程中生化特性的變化情況。結(jié)果表明：隨著貯藏時間的延長，三個處理組的pH先減小后增大，TBA值持續(xù)上升，其他指標(biāo)皆呈現(xiàn)逐漸下降的趨勢，
2、且在貯藏期前60d內(nèi)肌動球蛋白鹽溶性及Ca一ATPase活性差異不顯著(P>0．05)，但之后開始出現(xiàn)顯著差異(P<0．05)；在貯藏30d后，三個處理組的巰基含量快速下降且差異顯著(P<0．05)，一25~C處理組極顯著低于一5O℃處理組(P<0．01)。綜合分析各項指標(biāo)可知液體速凍溫度越低，軟殼梭子蟹在凍藏過程中肌肉品質(zhì)下降越小。關(guān)鍵詞：軟殼梭子蟹，速凍，凍藏，生化特性EfectofcryogenicliquidquiCk—freezingonthebiochemicalpropertiesofsoftshellswimmingcrab(
