1、中圊摩c亟提2013,29(36):404—408ChineseAgriculturalScienceBulletin湘西煙葉口感特性感官評價周米良,鄧小華,陸中山,黎娟。,田峰,田茂成,向德明’,楊麗麗(‘湘西自治州煙草專賣局,湖南吉首416000;湖南農業(yè)大學,長沙410128)摘要:為明確湘西煙葉的口感特性評價指標的區(qū)域特征和空間分布特征,對來自湘西煙區(qū)的41個煙葉樣品進行感官評價。結果表明:(1)湘西煙葉刺激性有至稍有;干燥感多數(shù)表現(xiàn)為有,少數(shù)稍有;余味以尚凈尚舒適為主。(2)煙葉刺激性、干燥感縣域間差異不顯著;余味差異極顯著,主要是
2、古丈縣煙葉的余味標度值極顯著高于其他各縣。(3)不同鄉(xiāng)鎮(zhèn)之間以紅石林鎮(zhèn)的余味標度值最高和干燥感標度值最低;高坪鄉(xiāng)、列夕鄉(xiāng)的刺激性標度值最低。(4)‘K326’的口感特性較‘云煙87’要好。(5)海拔低于600nl煙區(qū)的煙葉口感特性較其他海拔好。(6)煙葉刺激性、干燥感、余味在空間上分別以標度值2.6~2.8、2.7~2.8、2.6~2.8分為主要分布;口感特性評價指標標度值呈斑塊狀分布態(tài)勢。關鍵詞:烤煙;口感特性;感官評價;湘西中圖分類號:$572.01文獻標志碼:A論文編號:2013—0313SensoryEvaluationonTaste
