1、大學(xué)畢業(yè)設(shè)計摘要在本設(shè)計中高麥芽糖漿的生產(chǎn)方法是利用淀粉為原料,通過二次噴射液化、糖化、脫色過濾、離子交換、濃縮等工藝過程,制成濃度為75%的高麥芽糖漿。本次工藝采用的是雙酶法,這種工藝不但提高了麥芽糖的產(chǎn)量和淀粉的利用率,而且使生產(chǎn)成本大大降低。高麥芽糖漿的優(yōu)點有很多比如較高的保濕性和較低的吸潮性,口味相對適中的甜度,比較良好的抗結(jié)晶與抗氧化性,適中的粘度,穩(wěn)定的化學(xué)性質(zhì),冰點低,較高的耐熱性就算在加熱時也不容易發(fā)生美拉德反應(yīng)等。這些優(yōu)點使它被廣泛的應(yīng)用于食品、保健、化工等多種行業(yè),尤其是在食品工業(yè)中,可提高食品的粘稠度和口感這一
2、特性使它在甜品、冷飲、糖果、乳品等食品加工行業(yè)中被青睞。國際上目前利用酶法生產(chǎn)高麥芽糖漿是較為先進的方法之一,其中除了糖化酶和固定化液化酶的生產(chǎn)工藝外,還有熱分離水化系統(tǒng)精制麥芽糖漿以及超濾法等。目前國內(nèi)外酶法生產(chǎn)高麥芽糖漿仍處于主流位置。因酶法生產(chǎn)不僅成本低,生產(chǎn)較安全且生產(chǎn)效益高。本設(shè)計通過對國內(nèi)外文獻的查閱最終也采用酶法來進行高麥芽糖漿的生產(chǎn)。在本次設(shè)計中主要是對生產(chǎn)流程中所需各種物料平衡的計算、熱量平衡的計算、水平衡的計算、本設(shè)計重點工段(蒸發(fā)工段)的論證和設(shè)計以及設(shè)備選型等。關(guān)鍵詞:高麥芽糖漿;雙酶法;工藝;計算大學(xué)畢業(yè)設(shè)
