1、吉林農(nóng)業(yè)大學(xué)碩士學(xué)位論文輪葉黨參乳酸發(fā)酵飲料的研制姓名:姚娜申請學(xué)位級別:碩士專業(yè):農(nóng)產(chǎn)品加工及貯藏工程指導(dǎo)教師:文連奎20070601吉林農(nóng)業(yè)大學(xué)碩士學(xué)位論文輪葉黨參乳酸發(fā)酵飲科的研制摘要輪葉黨參(Condonpsislanceolata),又稱羊乳、四葉參、野生胡蘿h等,為桔??贫嗄晟葙|(zhì)藤本植物。其根肥大肉質(zhì)鮮嫩,可食用。經(jīng)“中國農(nóng)業(yè)部特種經(jīng)濟動植物及產(chǎn)品質(zhì)量監(jiān)督檢驗測試中心”鑒定,主要含黃酮類化合物,此外還含有揮發(fā)油、淀粉、黃酮醇甙、維生素,氨基酸及含礦物質(zhì)等,是重要的保健食品原料。本試驗以輪葉黨參為原料,主要
2、對輪葉黨參乳酸發(fā)酵飲料加工中乳酸菌種馴化、發(fā)酵條件、產(chǎn)品配方,產(chǎn)品穩(wěn)定性等進行了研究,本論文試驗研究主要獲得了如下結(jié)果:l脫皮條件:將輪葉黨參在100’C條件下烘干20rain,半人工半機械的脫皮。2采用逐步提高培養(yǎng)基中輪葉黨參汁濃度的方法,對St和Lb迸行聊i化,最后選用5:5的比例進行發(fā)酵劑的制備。經(jīng)過馴化后St和Lb凝乳時間分別縮短了1.5h和2h。酸度比馴化前的分別提高了10096和106%?;罹鷶?shù)比馴化前的分別提高了8.6倍和10倍。3輪葉黨參乳酸發(fā)酵飲料的最佳發(fā)酵工藝條件:St:Lb=l:1,發(fā)酵溫度為42
