1、1O6食品與藥品FoodandDrug2014年第16卷第2期薯莨色素的提取工藝及基本成分和抗菌活性研究彭建飛,范潤珍,李曉菲(1.深圳市計(jì)量質(zhì)量檢測研究院,廣東深圳518109;2.廣東海洋大學(xué)理學(xué)院,廣東湛江524025;3.湛江市農(nóng)業(yè)技術(shù)推廣中心,廣東湛江524038)摘要:目的探討薯莨色素的提取工藝,研究其基本成分和抗菌活性。方法以60%丙酮為提取劑,料液比(w/v)1:1o,常溫浸漬5h,60℃水浴回流3h,提取薯莨色素;測定其水分、灰分、粗蛋白、粗脂肪及粗纖維等含量;并以大腸桿菌、桉樹青菇菌、巴氏桿菌、蠟狀芽孢桿菌、芽孢桿菌、沙門菌為供試菌,檢驗(yàn)提取薯莨色素的抗菌活性。結(jié)
2、果薯莨色素提取率達(dá)28.6%;薯莨色素基本成分為:水分22.61%,灰分1.61%,粗脂肪2.89%,粗纖維2.80%,粗蛋白3.80%;薯莨色素濃度在0.1%~0.50%范圍內(nèi)對6種供試菌種皆顯示了不同程度的抑制效果。結(jié)論薯莨色素是具有抗菌活性的天然色素,具有一定的開發(fā)價值。關(guān)鍵詞:薯莨;色素;提取工藝;抑菌活性中圖分類號:11284.1文獻(xiàn)標(biāo)識碼:A文章編號:1672.979X(2014)02.0106.04ResearchonExtractionTechnologyofDioscoreaCirrhosaPigmentandItsElementaryComponentsandAn
