2、(HPLC-ICP-MS)對富硒雙歧桿菌菌粉中硒的形態(tài)進行研究。結果表明,富硒雙歧桿菌菌粉及其膠囊制品中硒的含量分別為(168.11±2.26)μg/g和(15.68±0.07)μg/g。與市售富硒產品相比較,富硒雙歧桿菌膠囊中硒的含量是富硒大米的100倍,但不及富硒酵母產品中硒含量的1/10。富硒雙歧桿菌產品中硒形態(tài)非常復雜,且含有許多不明硒化物,但其主要含硒氨基酸為硒代蛋氨酸,占總硒含量的(59.55±0.13)%。關鍵詞:富硒雙歧桿菌;形態(tài)分析;高效液相色譜;電感耦合等離子質譜SeleniumContentandSpeciationofSelenium-enrichedBif
