1、齊齊哈爾大學(xué)畢業(yè)設(shè)計(jì)(論文)摘要本設(shè)計(jì)為年產(chǎn)15萬噸11°(淡爽型)啤酒廠設(shè)計(jì),糖化工段的工藝設(shè)計(jì)是設(shè)計(jì)的重點(diǎn)。該啤酒經(jīng)過糊化,糖化,過濾,煮沸,冷卻,采用圓筒體錐底發(fā)酵罐,歷經(jīng)14天發(fā)酵而成。此次設(shè)計(jì)計(jì)算主要包括物料衡算,熱量衡算,冷耗計(jì)算和設(shè)備選型的計(jì)算以及重點(diǎn)設(shè)備糊化鍋的計(jì)算。該啤酒廠設(shè)計(jì)的圖紙主要包括糖化車間和發(fā)酵車間的流程,重點(diǎn)設(shè)備糊化鍋裝配圖,以及糖化車間的平面圖和立面圖。啤酒的釀造采用70%的優(yōu)質(zhì)麥芽,30%的大米。設(shè)計(jì)中采用濕法粉碎,該工藝可以使麥芽皮殼充分吸水變軟,粉碎時(shí)皮殼不易磨碎,胚乳帶水碾磨,較均勻,
