4、供理論依據(jù)?!痉椒ā恳孕迈r金桂為原料,以總酚含量、出汁率和透光率為指標(biāo),探討酶種類(lèi)、復(fù)合酶質(zhì)量比和料液比對(duì)酶解桂花汁制備效果的影響,并通過(guò)單因素試驗(yàn)和響應(yīng)面試驗(yàn)考察酶解溫度、酶解時(shí)問(wèn)、pH、復(fù)合酶添加量等因素對(duì)桂花出汁率的影響,確定最佳酶解T藝條件。【結(jié)果】復(fù)合酶解桂花汁最佳工藝條件為:在復(fù)合酶添加量1.o%o、酶解溫度45℃、pH3.5的條件下酶解】20rain,桂花出汁率為78.95%,桂花汁總酚含量為18.12mg/g、透光率為78.1l%,分別較單一酶解提高21.87%、11.09mg/g和45.6l%;各因素對(duì)酶解桂花汁影響效果的順序依次為:pH>酶解溫度>復(fù)合酶添
